Apple Cake

A wonderfully easy and delicious apple cake that is sure to become a favourite! This cake has the softest crumb and is loaded with sweet cinnamon apple flavour making it the perfect treat!

I’ve come to really appreciate apple cakes and apple baked desserts. The sweet flavours, warm textures and beautifully spiced pastries are like a big hug. Usually you’ll find fruit cakes popular when the weather is cold but I love them all year round.

Folks from The Netherlands are big on apple desserts. Apple pie, tarts, strudels are so common around the country so I guess it comes naturally to me to love this cake.

  • Minimal pantry staple ingredients that can be substituted.
  • Delicious sweet cinnamon apple flavour.
  • Can be made within minutes and eaten warm or cold. (Try warm with a scoop of vanilla ice cream 😉 )

I think I’ve made this recipe more times than I care to admit, once even making it 2 or 3 times in a week. I’ve tried it with different types of apples, nuts, sauces and toppings. Each one was fabulous!

How to make this cake

The recipe is one of my all time favourites because its a super easy. We start by mixing the sugar and apples together in a bowl. Letting them sit for a while gives them a chance to produce a lovely sweet apple juice and sweeten the apples.

You can add vanilla or cinnamon with the apples but I find it easier to add these into the batter in this recipe. You can use any kind of apple but I do love red apples here.

We then mix the dry ingredients together and add this mix to the liquids. The batter will be super thick and stiff which is totally normal because most of the moisture comes from the apples themselves.

Bake the apple cake and finish with a dusting of powdered sugar for a scrumptious treat! Feel free to play around with the spices, add-ins and toppings. Ice cream on a warm slice of cake or drizzled with caramel would be amazing.

This recipe makes 1 8 inch cake but can be doubled to make a 9×13 inch cake.

Ingredients

  • 2 cups chopped, peeled and cored apples

  • 3/4 cup (150gms) sugar

  • 1/4 cup (60mls) oil

  • 1 large egg

  • 1 teaspoon vanilla extract

  • 1/2 teaspoon baking soda

  • 1/2 teaspoon cinnamon

  • 1/4 teaspoon salt

  • 1 cup (125gms) flour

  • Optional: 1/2 cup walnuts

Directions

  • Mix apples with 1/2 cup sugar in a bowl and rest 15 minutes. Grease and flour an 8 x 8 inch square cake tin.
  • In a mixing bowl, whisk flour, baking soda, cinnamon and salt.
  • In a separate bowl, whisk egg, remaining sugar and vanilla for about a minute until slightly creamy and pale. Add in oil.
  • Fold in apple sugar mixture. Stir in flour mix using a wooden spoon. Batter will be thick. Fold in walnuts.
  • Spread batter into tin and bake in a preheated 180 C oven for 20 to 25 minutes or until cooked through.
  • No frosting is needed but u can dust with powdered sugar. Serve warm or cold.
