It has recently dawned on me that while I have a TON of chocolate cake recipes on my blog, all of them are chocolate fudge cakes and not a single good ole classic velvety chocolate cake recipe up! this had to change so I immediately went ahead and made a classic chocolate cake solely for this reason because while I’m a fudgy chocolate person at heart, I know there are many who prefer the simpler more velvety chocolate cakes so to all of those super light and moist velvety peeps, this one is for you ❤
As always I went to my never failing, crazy delicious master chocolate cake base recipe and turned it into a super easy basic cake recipe. This master recipe has made a number of appearances before, each being made into a different classic recipe:
- Buttery chocolate fudge cake: the base recipe that is the most sturdy due to the reverse creaming method technique which gives the most delicious melt in your mouth tender crumb.
- The king of all fudge cakes: this is the real deal of true fudgyness 😉 frosted with a super decadent ganache fudge frosting, this cake is a dream for all tight crumbed yet creamy chocolate cake lovers.
- Super moist chocolate fudge cake: this is one of my most made go to recipes as it has hot water as well as melted butter so you get the best of both worlds; super moist and dreamy fudge, very chocolatey and so easy to make.
- Devils food chocolate cake 😉😉
The frosting I used here is a wonderfully simple yet amazingly delicious milk chocolate frosting. This is one of my favourite frostings for any cake, it uses evaporated milk which makes it extra creamy and is a must try! 😊
I’m so happy with this cake because it’s crazy good, so chocolatey, so delicious and couldn’t be easier to make 😊 you just gotta love the classics right! 😉😂
Classic Chocolate Cake
Makes an 8 or 9 inch layered cake or about 2 1/2 dozen cupcakes.
- 1 1/2 cups (190gms) all purpose flour
- 2 tablespoons cornflour/cornstarch
- 1 teaspoon baking soda
- 1 teaspoon baking powder
- 1/2 teaspoon salt
- 1 cup (96gms) cocoa powder
- 1/2 cup (100gms) melted butter
- 1/3 cup (80mls) oil
- 1 1/2 cups (300gms) white sugar
- 2 eggs
- 2 teaspoons vanilla extract
- 1/2 cup (125mls) buttermilk or sour cream
- 1 cup (250mls) boiling water or coffee
- 1 cup (200gms) softened butter
- 3/4 – 1 cup cocoa powder
- 3 1/2 cups icing sugar
- 3 – 4 tablespoons evaporated milk
- 1 teaspoon vanilla extract
- Preheat oven to 160C/325F. Grease and flour cake tins.
- In a bowl, whisk together flour, cornflour, baking powder and baking soda, salt and cocoa powder until very well combined.
- In a large bowl, whisk together butter, oil and sugars until well combined. Add in eggs one at a time whisking only until just combined. Add in vanilla.
- Add in half of the dry mix then the sour cream then the remaining dry mix whisking until just combined. Pour in hot water and stir until combined. Batter will be thin.
- Divide batter between cake tins and bake for 25 to 28 minutes until baked through and a toothpick or knife comes out clean. Cool cake in tins for 10 minutes then cool on a wire rack for 15 minutes before placing in airtight containers to cool completely.
For the frosting
- Whisk butter until paled and creamy, about 5 minutes.
- Add in the cocoa powder and beat smooth.
- Add in the icing sugar and evaporated milk in alternating batches adding enough milk until a very soft frosting is formed. Add in vanilla and beat well to combine.
